Quick vegan apple pie

The smell of seasonal apples baking in the oven and soft notes of cinnamon bring warm feelings of comfort and joy. Whip up this dairy-free version of the original to hit all the right notes.

  • For the pie:
  • 2 packets Jus-Rol shortcrust pastry (suitable for vegans)
  • 50g walnuts
  • 1 kg Bramley apples, peeled, cored and cut into ½ cm slices
  • 1 lemon, juiced
  • 40g vegan margarine (we used Stork)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla paste
  • 1 tablespoon cognac
  • 2 tablespoons maple syrup
  • 6 tablespoons golden caster sugar
  • 2 tablespoons plain flour
  • For the glaze:
  • 1 tablespoon oat milk
  • 1 tablespoon maple syrup
  • 1 tablespoon demerara sugar
Directions
  • Step 1 Preheat the oven to 160 degrees Celsius (fan force).
  • Step 2 Place the walnuts on a baking tray and roast for 6-8 minutes. Set aside to cool.
  • Step 3 Increase the heat to 190 degrees Celsius (fan force). Relax the pastry at room temperature while you make the apple filling.
  • Step 4 In a large bowl combine the apple slices, lemon juice, cinnamon, ginger, vanilla paste, cognac, maple syrup and sugar, until evenly coated.
  • Step 5 Cook over medium-low heat for 5 minutes, or until the apples are just starting to soften. Roughly chop the walnuts and stir them into the apple mixture with the flour.
  • Step 6 Carefully unroll the shortcrust pastry and line a pie dish (about 22cm diameter, with a removable base). Leave 2 cm of overhang, and trim the excess with a knife. Fill the pie case with the apple filling.
  • Step 7 Cut the second sheet of shortcrust pastry into 14 x 1 cm wide strips. To create a lattice, place the 7 strips vertically. Then working with one piece at a time, weave the remaining strips over and under horizontally. When finished, seal the edges of the pie and trim any excess. (If you don’t wish to lattice the pie, place the second sheet on top, seal the sides, trim the excess pastry and make four even cuts to let the steam out).
  • Step 8 Whisk together the oat milk and maple syrup and use a pastry brush to glaze the top of the pie. Sprinkle with demerara sugar.
  • Step 9 Bake in the centre of the oven for 45 minutes, or until the pastry is golden and the apple is soft. (If the pastry browns too quickly, cover with foil.)
  • Step 10 Allow the pie to cool for at least 3 hours before cutting (this will allow the filling to set).
