Apple and berry bircher muesli

This overnight recipe is great for getting a head start on the week. It will last in the fridge for a couple of days and can easily be scaled up or down depending on how many mouths you are feeding.
Ingredients
- ½ lemon, juice only
- 1 large, sharp juicy apple, coarsely grated (Cox, Discovery, Spartan)
- 125g porridge oats (not jumbo oats)
- 40g dried cranberries (or other dried fruit, like dried cherries or raisins)
- 2 tablespoons sunflower seeds
- 2 tablespoons pumpkin seeds
- 1 tablespoon chia seeds
- 2 tablespoons clear honey
- 1 teaspoon vanilla paste
- Pinch of cinnamon
- 350ml high-quality whole milk
- To serve::
- 200g fresh mixed berries (blueberries, raspberries, strawberries)
- Greek yoghurt
- Almonds or walnuts, toasted and roughly chopped
- Honey
- Honeycomb (optional)
Directions
- Step 1 Put the lemon juice and grated apple in a Mepal bowl and toss to combine. (The lemon juice will prevent the apple from discolouring.)
- Step 2 Add the remaining muesli ingredients and mix to combine. Close the bowl and chill in the fridge overnight (at least 6 hours).
- Step 3 The next morning, stir the bircher muesli to recombine and divide between bowls.
- Step 4 To serve, top with a dollop of Greek yoghurt, honey, berries, a sprinkle of toasted nuts and a chunk of honeycomb.
Variations:
- For a vegan version, swap the honey for maple syrup, the whole milk for oat milk and serve with a dollop of coconut yoghurt.
